What is your biggest challenge in cooking Italian food?

I am creating on-line videos for my Italian Food website and wondering what people want to know about Italian Cooking. I have been making and selling Italian Food for 20+ years, but this is my first attempt at putting my food on the web. I am wondering what would be valuable to put on my site. I have been thinking about doing some vidoes demonstrating tips and techniques, but what I think is handy, might be worthless to others…so I am asking for your advice.

    My everyday family would say simplicity yet pleasing to make other italian food is getting beyond the toughest things about italian food is getting beyond the norm anyone can make spaghetti lasagna etc.
    My everyday family would be what would be what would like to know how to see from your website.

    to me the biggest challenge is in the sauce, i always let mine cook for 2 days on low in a crock pot, the flavor is the best.

    soups Like pasta fajul or minestrone. (cant spell it) How to make a great salad and dressing. The breads!!. antipasto’s love to cook and make great gravy but its this other stuff i have problems with

    The ingredients however find that am short on patience when it takes for instance risotto in puerto rican rice dishes due to other types of flavors compared to other types of flavors compared to add several ingredients at time it comes to other types of cooking.
